

…after reading the recipe for those cookies in that photo down there…I could…either actually make them…or…I could just eat the 1 whole cup of crushed up Health bars it calls for…hmmmm…I’m leaning towards the crushed up Heath bars, even though the cookies look really good…yum…yes…I am being lazy…

Peanut Butter Heath Bar Cookies (by Bunny Spice)
2 cups creamy peanut butter
1 cup light brown sugar, packed
1 cup granulated sugar
2 eggs
1 tsp vanilla
2 tsp baking soda
½ tsp kosher salt
1 cup Heath bars (about 21 miniatures), choppedHeat oven to 350°. In a large bowl, mix peanut butter, sugars, eggs, vanilla, baking soda, and salt until smooth. Fold in chopped Heath bars.
Scoop by the tablespoonful and shape dough into balls. Place two inches apart on parchment-lined cookie sheets. Use the tines of a fork in a criss-cross pattern to flatten balls.
Bake for 10-12 minutes, rotating the cookie sheets halfway through, until puffy and golden. Let cool slightly before transferring cookies to a wire rack.

…not the same roller coaster I’m currently on…most people can’t see mine…it exists only in my emotions…but this one is pretty…and I like it…
